Take a hike out to
Waterlemon Cay.  Large
starfish can be found
while snorkeling at
Waterlemon Cay -- even
cookies have been
inspired.

Waterlemon Cay

1 1/2 sticks melted, organic salted butter
3/4 cups raw, natural sugar
1/4 tsp. Salt
1/2 tsp. finely grated lemon rind
1 tsp. lemon extract
1 tbs. Absolut Citron Vodka
1 large organic brown egg -- coddled

(Mix all ingredients until smooth)

2 cups of King Arthur's flour

(refrigerate for 1 hour -- best rolled into
cookie cutter sized log -- can be frozen)
(1 hour or later, remove from
refrigerator, and cut into 1 cm. slices)
(Use a star cookie cutter -- available at
Williams-Sonoma)
(Pinch an curl each leg to make starfish,
varrying the direction of each)
(Sprinkle with light blue sugar)
(Bake 325 degrees 13 1/2 minutes)

(Use cookies to decorate other deserts like
the fruit tartlets filled with lemon creme
above.)
